Healthy Game Snacks: The Better Chip

I’ve been working on finding healthy snack options for game nights, and while I’ve had some success with veggies and hummus or popcorn, sometimes you just need to provide some chips for the group. In comes The Better Chip . They’re vegan, gluten-free, and have no GMOs. Plus, they come in a bunch of great flavors.

The Better Chip reached out to me and wanted me to create a “nacho” style recipe in honor of the World Cup. I used their Spinach & Kale chip (which is ridiculously delicious) to make a Greek-inspired snack. It’s essentially hummus and a Greek salad on top of the chips. Want to make it yourself? Greek Salad "Nachos"

Ingredients
  • The Better Chip Spinach & Kale Chips
  • Hummus
  • 1 cucumber
  • 1 tomato
  • ½ onion
  • Kalamata olives
  • Feta cheese
  • Black Pepper
Instructions
  1. Using a knife, spread the hummus on each chip.
  2. Dice the cucumber, tomato, onion, and kalamata olives. Mix together.
  3. Crumble feta into the salad mixture, top with pepper. Mix together.
  4. Place a spoonful of the salad onto each chip. Serve!

 

This also makes a nice small meal on a hot summer day. Want to make it even more “nacho”-like? Amp up the Greek-ness and the cheesiness by making Saganaki! Moral of the story is, I had a great time playing around with Better Chips and making Greek “nachos”. (And they must have been good–Greece won their game after I made it!)   1. These chips look great! I’m always looking for healthy gluten-free snacks. I’ll have to look for these in the grocery store!

    I would probably use the jalapeño flavor to create a more traditional Mexican nacho with a bit a refried beans, cheese, chicken pieces, and fresh salsa. I’m not sure if the corn or spinach ones would work better but I’d love to try making chips with goat cheese spread and cranberries and walnuts on top. And maybe a drizzle of a good balsamic vinegar if I was feeling fancy (that’s one of my favorite salads!)

  2. Nachos are probably the go-to for these, but just having them with hummus would beat the heck out of pita chips!

    Everyone’s mom used to do the crumbled chips on top of casserole, and this may fill that (casse)role, quite well! ;D

  3. Mmm, some spinach artichoke dip with the spinach kale better chips would be delish! I’d love to make a corn-chip enchilada with the jalapeno better chips. I’d layer the chips on the bottom, add a layer of black beans, a layer of shredded chicken cooked in salsa and cream cheese, and repeat layers. Add enchilada sauce on top, sprinkle with cheese, and bake. I bet that’d be awesome.

  4. I second Katrina’s idea of Jalapeno flavor with traditional nachos. yum!

    I always make a buffalo chicken dip for get-togethers. We typically use Fritos, but I bet the corn better chips would be yummy with it! And would help cancel out the unhealthiness of the dip a bit 😉 haha

  5. I would love to try the jalapeno chips with some sort of cream cheese based spread to see if I can emulate a jalapeno popper in chip form!

  6. These seem like they’d be a great alternative for hummus or guacamole. I love hummus but a lot of the veggies you normally eat with it I just don’t like…also, now that I’m counting calories I’m on the look out for good crunchy substitutes.

  7. Can’t go wrong with some hamburger nachos. I’m a meat and potatoes kind of guy so some browned hamburger and melted cheese on top of the better chip would hit the spot.
